Simple 4-Ingredient Chia Pudding with Strawberry Jam

Ingredients
  

Chia Seed Pudding

  • 1 13.5 oz can light coconut milk
  • 5 tbsp organic chia seeds
  • ½ tsp. ground cinnamon
  • 1 tsp. vanilla extract

Strawberry Jam (Optional)

  • ½ cup fresh or frozen strawberries
  • 1 tbsp organic chia seeds

Instructions
 

Chia Seed Pudding

  • Add all ingredients to bowl and mix until well combined.
  • Store in an air-tight container in the fridge. Let sit for a few hours or overnight to let it thicken. The longer the pudding sits, the thicker it will be!

Strawberry Jam (Optional)

  • In a small saucepan over medium-low heat, add strawberries and chia seeds. Heat until strawberries are softened. Mash with a fork or potato masher and continue to heat until it reaches a smooth consistency.
  • Continuing to stir, bring mixture to a light boil and remove from heat. Use immediately or store in an air-tight container in the fridge.

Notes

  • To thicken, add more chia seeds (1 tbsp. at a time) until it reaches desired consistency. Keep in mind the pudding will continue to thicken as it sits.
  • Store in an airtight container in the fridge for up to 5 days.
