Add all ingredients to bowl and mix until well combined.
Store in an air-tight container in the fridge. Let sit for a few hours or overnight to let it thicken. The longer the pudding sits, the thicker it will be!
Strawberry Jam (Optional)
In a small saucepan over medium-low heat, add strawberries and chia seeds. Heat until strawberries are softened. Mash with a fork or potato masher and continue to heat until it reaches a smooth consistency.
Continuing to stir, bring mixture to a light boil and remove from heat. Use immediately or store in an air-tight container in the fridge.
Notes
To thicken, add more chia seeds (1 tbsp. at a time) until it reaches desired consistency. Keep in mind the pudding will continue to thicken as it sits.
Store in an airtight container in the fridge for up to 5 days.
