Simple Winter Salad with a Homemade Vinaigrette

Ingredients
  

Salad

  • 16 oz. organic mixed spring greens
  • 1 Honeycrisp apple, thinly sliced
  • ½ cup red onion, thinly sliced
  • ¾ cup dried cranberries
  • 4 oz. crumbled goat cheese

Honey Dijon Vinaigrette

  • ¾ cup extra virgin olive oil
  • 3 tbsp. Dijon mustard
  • 2 tbsp. honey
  • kosher salt and cracked black pepper, to taste

Instructions
 

  • In a bowl, add washed spring greens. Top with sliced onion, apple, cranberries and goat cheese.
  • For the dressing, add all ingredients to a small bowl and whisk until well combined. Adjust ingredients to your taste as needed (increase honey for sweetness, or increase Dijon for more tang!).
  • Serve the dressing on the side, or pour the dressing over the salad, toss to combine and serve!

Notes

  • Store leftover dressing in a sealed container in the fridge for up to 1 week!
