Easy Apple Cinnamon Oats

Oatmeal is one of my favorite healthy breakfasts, especially in the fall and winter on a grey, chilly day. This oatmeal is quick, so easy, and comes together in 5 minutes or less. It’s filling, comforting, and full of healthy fat and fiber!

One of the things I love about oatmeal is how versatile it is. You can easily transform your oatmeal in countless ways, using different fruits, nuts, seeds, or spices. That being said, these apple cinnamon oats are one of my favorite ways to eat oatmeal in the fall. They’re full of apple pie flavor, and leave a cozy, warm feeling in your belly. They’re also packed full of chia seeds to provide healthy fiber and keep you fuller for longer.

Not only is this oatmeal full of healthy ingredients and cozy fall flavors, but it’s also dairy-free, gluten-free, and vegan! It’s a nourishing, wholesome breakfast your whole family can enjoy in no time.

Ingredients in oatmeal:

  • Old-fashioned oats (use certified gluten-free if needed): I like the way these oats maintain their texture once cooked
  • Chia seeds
  • Maple syrup
  • Kosher salt
  • Cinnamon

How to make oatmeal:

  • Just add all ingredients to a bowl except for chopped apples, stir to combine, and microwave for 3 minutes until all liquid is absorbed. Top with chopped apples and whatever else you like!

I love adding my chopped apples to the oatmeal after it’s cooked to add a delightful contrast between hot and cold temperatures. This also keeps the apples really crunchy, which nicely complements the smooth, creamy texture of the oatmeal. However, you can also just throw the chopped apples in your bowl at the beginning, and cook them right along with the rest of your oatmeal for a deliciously warm breakfast.

Top your finished oatmeal with whatever you like! My favorite toppings include:

  • Natural creamy peanut butter
  • Cinnamon
  • Plain greek yogurt
  • Maple syrup

Easy Apple Cinnamon Oats

Ingredients
  

  • ½ cup old-fashioned oats
  • 1 cup + 1 tbsp water
  • 1 tbsp chia seeds
  • 1 tsp cinnamon
  • pinch kosher salt
  • 1 tsp maple syrup
  • chopped apples, for topping

Instructions
 

  • Mix all ingredients except chopped apples in a microwave-safe bowl.
  • Microwave for 2 minutes 30 seconds to 3 minutes, stirring as needed to prevent mixture from bubbling over.
  • Once all the liquid is absorbed, give it one last stir and top with chopped apples and other toppings of your choice (I like peanut butter or greek yogurt on mine!). Let cool slightly before serving.
