This simple salad is light, crisp, and full of fresh flavor - everything a salad should be. Highly recommend serving with the homemade vinaigrette listed in the recipe!
In a bowl, add washed spring greens. Top with sliced onion, apple, cranberries and goat cheese.
For the dressing, add all ingredients to a small bowl and whisk until well combined. Adjust ingredients to your taste as needed (increase honey for sweetness, or increase Dijon for more tang!).
Serve the dressing on the side, or pour the dressing over the salad, toss to combine and serve!

Store leftover dressing in a sealed container in the fridge for up to 1 week!
