How to Make Fluffy Banana Pancakes for Two
To me, nothing says Saturday morning like some fluffy, made-from-scratch banana pancakes.
My ideal weekend morning means waking up early but waking up slow. I love spending time sipping on my coffee while reading or watching some Gilmore Girls (the best). It also means topping off my long, slow morning with some syrupy, fluffy banana pancakes.
I knew I wanted pancakes for breakfast, but I also knew I didn’t want to be left with 20 left over that would most likely go to waste. So, I came up with this genius recipe that serves just two people! (Or one, if you wake up with a big appetite!)
If you often cook for just two people, this recipe is perfect for you! My husband and I split this recipe and we each ate 3 small pancakes. It’s the perfect serving size to pair with some scrambled eggs, bacon, and fruit on the side for a filling, balanced breakfast! These pancakes are SO easy and they come out fluffy, moist, sweet, and delicious every time.
You definitely need to include these pancakes in your morning routine this weekend!
Fluffy Banana Pancakes for Two
Ingredients
- 1 cup all purpose flour
- 1 tsp baking powder
- 1 large ripe banana, mashed
- 1 large egg
- ¼ tbsp. coconut milk, unsweetened
- 1 tbsp. vegetable oil
- ½ tsp. vanilla
- pinch kosher salt
Instructions
- In a small bowl, whisk together flour, baking powder and salt. Set aside.
- In a medium bowl, mix mashed banana, egg, milk, oil, and vanilla.
- Add dry ingredients to wet ingredients and stir until just combined.
- Heat a griddle or frying pan over medium heat. Lightly grease pan (I use coconut oil).
- Scoop out pancake batter using a 1/4 cup, and cook on each side for 3 mins or until golden brown!
Notes
- Recipe makes 3-6 pancakes, depending on how big you make them!
