- 1 cup all purpose flour
- 1 tsp baking powder
- 1 large ripe banana, mashed
- 1 large egg
- ¼ tbsp. coconut milk, unsweetened
- 1 tbsp. vegetable oil
- ½ tsp. vanilla
- pinch kosher salt
In a small bowl, whisk together flour, baking powder and salt. Set aside.
In a medium bowl, mix mashed banana, egg, milk, oil, and vanilla.
Add dry ingredients to wet ingredients and stir until just combined.
Heat a griddle or frying pan over medium heat. Lightly grease pan (I use coconut oil).
Scoop out pancake batter using a 1/4 cup, and cook on each side for 3 mins or until golden brown!
