Ingredients in Creamy Cauliflower Rice:
- Extra Virgin Olive Oil: You can use butter or olive oil here!
- White Onion: When it cooks down, the white onion sweetens and adds a depth of flavor to the rice.
- Garlic: The garlic adds a delicious spicy, sweet flavor.
- Cauliflower Rice: I use a bag of frozen cauliflower rice to make this recipe super simple. Just open the bag and pour the frozen contents into the pan!
- Coconut Cream: You can buy canned coconut cream on its own, or if you have a can of full-fat coconut milk just skim the thick part off the top! That is the coconut cream.
- Cilantro: Fresh cilantro is the star of the show here! You can chop up both the stems and leaves of cilantro. The stems are tender and flavorful, just like the leaves!
- Lime Juice: Use fresh lime juice in this dish! You will be able to taste the difference between fresh and bottled. Fresh lime juice has a much cleaner, zestier flavor! Adding some fresh zest would also add a fresh punch of lime.
- Kosher Salt and Black Pepper: Use these ingredients to taste! I love the way the salty taste complements the zesty lime.

Creamy Cilantro Lime Cauliflower Rice
Ingredients
- 1 tbsp olive oil, extra virgin
- ¼ cup white onion, diced
- 1 tsp minced garlic
- 1 ½ cups frozen cauliflower rice
- ¼ cup coconut cream
- ½ cup fresh cilantro, chopped
- juice of 1 lime
Instructions
- Heat olive oil in a skillet over medium heat. Add onions and garlic and cook until softened, about 3 minutes. Add cauliflower rice and stir to combine.
- Cook cauliflower rice until it reaches desired softness, about 7 to 8 minutes.
- Stir in coconut cream, lime juice, and cilantro. Serve immediately.
