Ingredients
  

  • 1 tbsp olive oil, extra virgin
  • ¼ cup white onion, diced
  • 1 tsp minced garlic
  • 1 ½ cups frozen cauliflower rice
  • ¼ cup coconut cream
  • ½ cup fresh cilantro, chopped
  • juice of 1 lime

Instructions
 

  • Heat olive oil in a skillet over medium heat. Add onions and garlic and cook until softened, about 3 minutes. Add cauliflower rice and stir to combine.
  • Cook cauliflower rice until it reaches desired softness, about 7 to 8 minutes.
  • Stir in coconut cream, lime juice, and cilantro. Serve immediately.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
