Easy Blueberry Banana Baked Oatmeal

Ingredients
  

Wet Ingredients

  • 1 ripe banana, mashed
  • 1 egg
  • 1/4 cup water
  • 1/3 cup dairy-free milk (I used Fairlife)
  • 2 tbsp pure maple syrup
  • 1/2 tsp vanilla

Dry Ingredients

  • 1 1/2 cup old fashioned oats
  • 1/2 tsp cinnamon
  • 1/4 tsp kosher salt
  • 1/4 cup frozen or fresh blueberries
  • unsweetened coconut flakes, optional

Instructions
 

  • Preheat the oven to 450F. In a small bowl, mash banana. Add all wet ingredients to mashed bananas and mix.
  • In a separate, larger bowl, mix all dry ingredients together.
  • Add wet ingredients to dry ingredients and stir to combine. Gently fold in the blueberries. 
  • Evenly pour mixture into a square, parchment-paper lined baking dish. Bake for 25-30 minutes until golden brown.

Notes

  • Feel free to use whatever type of fruit you like!
  • It tastes best when served warm!
  • Baked oatmeal keeps well for 2-3 days in a sealed container or for up to 3 months in the freezer.
