Easy Blueberry Banana Baked Oatmeal

Wet Ingredients
- 1 ripe banana, mashed
- 1 egg
- 1/4 cup water
- 1/3 cup dairy-free milk (I used Fairlife)
- 2 tbsp pure maple syrup
- 1/2 tsp vanilla
Dry Ingredients
- 1 1/2 cup old fashioned oats
- 1/2 tsp cinnamon
- 1/4 tsp kosher salt
- 1/4 cup frozen or fresh blueberries
- unsweetened coconut flakes, optional
Preheat the oven to 450F. In a small bowl, mash banana. Add all wet ingredients to mashed bananas and mix.
In a separate, larger bowl, mix all dry ingredients together.
Add wet ingredients to dry ingredients and stir to combine. Gently fold in the blueberries.
Evenly pour mixture into a square, parchment-paper lined baking dish. Bake for 25-30 minutes until golden brown.

- Baked oatmeal keeps well for 2-3 days in a sealed container or for up to 3 months in the freezer.
