Simple Greek Yogurt Papaya Breakfast Bowl
Every bite of this yogurt bowl takes me back to our honeymoon. Back to the white beaches of Saint Lucia and room service breakfast served on large wooden trays full of tropical fruit. Can I relive that week please?!
But really, have you seen a more tropical breakfast?! Anyway, when I’m not on vacation, at least this Greek Yogurt Papaya Breakfast Bowl helps me feel like I am! It’s so simple to throw together, and super nourishing. Papaya among other things, is great for digestion. The Greek yogurt packs in a ton of protein, and the fresh fruit on top adds a healthy boost of antioxidants!
This breakfast is also super filling without leaving you feeling heavy and slow. It’s the best healthy, quick breakfast for any time of year! Especially on those days you wish you were on a tropical island (which is almost every day, am I right?).
Simple Greek Yogurt Papaya Breakfast Bowl
Ingredients
- 1 papaya, seeds removed
- 1 cup plain greek yogurt, I like Fage 5%
- 1/2 cup stovetop granola, recipe on my site
- fresh fruit, for topping
Instructions
- Carefully slice papaya in half and scoop out seeds with a spoon. (These have a peppery flavor and can be saved for other recipes!)
- Assemble yogurt bowl. Spoon 1/2 cup of yogurt into each papaya half, top with stovetop granola and any fresh fruit you like.
