Easy Pizza Topped Spaghetti Squash Boats
Spaghetti squash is already delicious on its own, but top it like a pizza? Now we’re talking. Just add some cheese, pepperoni, and seasoning, and voila. This meal is a pizza flavor explosion in every bite!

All you have to do is bake the spaghetti squash as if you were eating it as is, then top with pepperoni, cheese, and whatever toppings you like for the last 5 minutes of cook time! It’s seriously so simple. And so good.
It’s nutritious, filling, cheesy, and so delicious. You get all the savory and herby flavors of pizza without the grease, bloat, or uncomfortable fullness of smashing a regular pizza – not that I don’t love a good pizza. But, this spaghetti squash version is such a satisfying alternative if you’re trying to eat a little healthier and feel a little better!
Easy Pizza Topped Spaghetti Squash Boats
Ingredients
- 1 spaghetti squash
- 2 tbsp. olive oil
- kosher salt and black pepper, to taste
- ½ cup shredded mozzarella cheese, or cheese of choice
- pepperoni, sliced
- Italian seasoning, to taste
Instructions
- Preheat oven to 415°F.
- Microwave squash for 2-3 minutes to soften, then carefully cut in half from top to bottom. Scoop out seeds with a spoon.
- Brush inside of each half with olive oil and sprinkle with salt and pepper.
- Bake face down on a parchment-lined baking sheet for 40-45 minutes. Its done when the outer skin can be easily poked with a fork!
- Remove from oven and turn face up. Top with cheese of choice and pepperoni. Return to oven for 5 more minutes, or until cheese is melted.
- Sprinkle with Italian seasoning before serving.
