Easy Pizza Topped Spaghetti Squash Boats

All the flavors of cheesy pizza without all the gluten and carbs! The spaghetti squash makes this a nutrient dense meal, without lacking in flavor or satisfaction.

- 1 spaghetti squash
- 2 tbsp. olive oil
- kosher salt and black pepper, to taste
- ½ cup shredded mozzarella cheese, or cheese of choice
- pepperoni, sliced
- Italian seasoning, to taste
Preheat oven to 415°F.
Microwave squash for 2-3 minutes to soften, then carefully cut in half from top to bottom. Scoop out seeds with a spoon.
Brush inside of each half with olive oil and sprinkle with salt and pepper.
Bake face down on a parchment-lined baking sheet for 40-45 minutes. Its done when the outer skin can be easily poked with a fork!
Remove from oven and turn face up. Top with cheese of choice and pepperoni. Return to oven for 5 more minutes, or until cheese is melted.
Sprinkle with Italian seasoning before serving.
