Preheat oven to 425°F. Line 2 baking sheets with parchment paper and set aside.
Wash off your sweet potatoes and thoroughly pat dry with paper towels. Carefully slice the sweet potatoes into ¼" fry-shaped pieces.
Toss the sweet potatoes with just olive oil and salt. (Don't add remaining seasonings yet.)
Spread out the sweet potato slices on baking sheets, leaving space between each piece. This will help them get crispy. Don't overcrowd the pan or they will never crisp!
Bake sweet potatoes for 25 minutes or until desired crispiness, flipping them over halfway through for even cooking.
After they're cooked, let cool for 5 minutes and then toss with remaining seasonings. Serve immediately and enjoy!
Notes
Waiting until afterwards to season the potatoes prevents the seasonings and spices from burning in the oven!
Let cool completely, then refrigerate leftover fries in an airtight container in the refrigerator for up to 4 days.
