Jayni Hershberger
The easiest one-bowl recipe for weekend (or week-night) baking! It's seriously fool-proof. It's so fluffy, soft, and full of warm flavors. I hope you love it!

Equipment

  • 9x5 Loaf pan

Ingredients

  • cup canned pumpkin
  • 3 cups all-purpose flour
  • 1 tbsp. baking powder
  • pinch kosher salt
  • 1 12 oz. beer
  • 2 tbsp. brown sugar
  • ½ tsp. cinnamon
  • ¼ tsp. nutmeg
  • 4-6 tbsp. cold, salted butter, cut into slices

Instructions

  • Preheat oven to 375°F.
  • Mix all ingredients in one large bowl until just combined. Pour batter into a greased loaf pan and top with 4-6 slices of cold, salted butter. (The butter gives it a crispy, shiny coating and a delicious flavor!)
  • Bake for 40-50 minutes until lightly browned. It's done when a toothpick comes out clean after poking it in the center.

Notes

  • Serve topped with extra butter, pumpkin butter, cream cheese, or honey!
