3 Ingredient Peanut Butter Cups (Gluten Free)

This is THE easiest and yummiest dessert to make. I love having these on hand for a sweet and salty post-dinner snack! They're made of only three ingredients and they're seriously fool proof!

Equipment

  • Muffin tin
  • Cupcake liners

Ingredients
  

  • 1 ½ cup dark chocolate chips
  • 1 ½ tbsp coconut oil
  • 1 cup natural peanut butter, divided
  • coarse sea salt, optional, for topping

Instructions
 

Prepare your pan.

  • Using a muffin tin, line each mold with paper cupcake liners or parchment paper.

Melt chocolate.

  • In a microwave-safe dish, combine chocolate chips and coconut oil. Microwave, stirring every 30 seconds until melted.

Assemble.

  • Pour about ½ tablespoon of melted chocolate into each cupcake liner. You just need enough to cover the bottom of the liner!
  • Freeze for 5 minutes or until chocolate is hardened.
  • Remove tray from freezer, and spoon about 1 tsp of peanut butter on top of each chocolate layer. Top the peanut butter with remaining melted chocolate.
  • Sprinkle the top of each cup with flakey sea salt if desired (I highly recommend it!). Place tray back in the freezer and chill for 10 more minutes or until hardened. Enjoy!
