Tahini Date Cookie Recipe (Gluten and Dairy Free)

These cookies are only THREE ingredients, and they seriously could not be any easier to make. Follow my recipe and you’ll have chewy, healthy, naturally sweetened cookies to snack on in no time!

You’ll be reaching for these cookies all day long. They’re the best healthy snack for any time of day! They’re made of just three simple, nourishing ingredients so you don’t have to feel guilty for grabbing another. They’re also gluten free, grain free, dairy free and made of Whole30 approved ingredients!

Ingredients in These Cookies:

  • Tahini: Tahini is just ground sesame seeds. It has a consistency similar to runny peanut butter. If you’ve never tried tahini before, now is the perfect time to try it!
  • Dates: Dates provide the natural sweetness and chewiness to these cookies, as well as help hold them together. They also add some important nutrients, like fiber, protein, and many nutrients.
  • Egg: The egg helps hold the cookies together as they bake!

Because these cookies don’t contain any added sugar, the don’t give you that unwanted sugar coma after eating sweets. They’re chewy, thick, and always satisfy that snack craving. Who doesn’t love a eating cookie that you can actually feel good about eating?

Plus, you truly won’t believe how easy they are to make. They can be ready from start to finish in under 15 minutes! Just blend the 3 ingredients, shape the cookies, and bake. It doesn’t get any easier than that.

How to Make Cookies:

  • Blend tahini and dates. Using a food processor or blender, blend the tahini and dates together until they form a smooth mixture.
  • Blend in the egg. The egg helps bind the cookies together, don’t forget to add it! Let it blend for a few seconds until the mixture visibly thickens.
  • Shape cookies. Drop cookies onto parchment lined baking sheet. I usually measure 1 heaping tablespoon of dough per cookie.
  • Bake. Just bake for 9 minutes or until light golden brown! If there’s some oil surrounding the cookies, that’s okay. Let cookies cool on the baking sheet for 5-10 minutes, then transfer to a cooling rack to cool completely.

Ingredients
  

  • 1 cup tahini
  • 1 cup pitted dates
  • 1 egg

Instructions
 

  • Preheat oven to 350°F. Line a baking sheet with parchment paper and set aside.
  • Add tahini and dates to your blender or food processor. Pulse until it comes together and forms a smooth mixture.
  • Add the egg. Continue pulsing until the mixture binds and thickens slightly.
  • Scoop rounded tablespoons of cookie dough onto baking sheet. Flatten each cookie with the prongs of a fork, then turn your hand 90° and press down again to make a criss-cross pattern.
  • Bake for 9 minutes or until lightly golden brown. When you take them out of the oven, you may see pools of oil from the tahini surrounding each cookie. This is normal. Let cookies cool for 5-10 minutes on a baking sheet. Move to a cooling rack to let cool completely. Enjoy!

Notes

  • You can store leftover cookies at room temp for 3 days, or in the freezer for up to 3 months. I personally love to enjoy them straight from the freezer!
  • You can also sub a nut butter of choice for the tahini.
