Nothing says fall like fresh apples picked from the orchard. Every year, we go to our local orchard with a group of friends and pick the best apples we can find. Afterward, everyone comes back to our house to cook or bake an original apple recipe, and show off their most creative apple-inspired dish. One of the tastiest treats we got to try were these Peanut Butter Apple Energy Bites!

They are small and bite-size so you can easily just grab one, but let’s be real… you’ll probably eat two or three at a time! They provide the perfect hit of sweetness from the honey and peanut butter, with a fresh crunch from the grated apple. They also contain flaxseeds and chia seeds for an extra boost of healthy nutrients!

Using fresh apples from your local orchard is so much fun, but these bites are equally delicious in the fall as they are in the summer. So don’t let the seasons stop you! Ingredients
  

  • 2 cups creamy peanut butter, I like Smucker's Natural Creamy PB
  • ½ cup + 2 tbsp. honey
  • 2 tbsp. chia seeds
  • 2 tbsp. flaxseeds, ground
  • 1 cup coconut flakes, unsweetened
  • 2 cups old-fashioned oats, use certified gluten-free if needed
  • 2 shredded apples, (I like Honeycrisp or Pink Lady)
  • mini dark chocolate chips, to taste
  • 2 scoops protein powder, optional

Instructions
 

  • First, use largest side of a cheese grater to carefully grate the apples into a large bowl.
  • Add all remaining ingredients except oats to the bowl. Slowly add oats in small amounts until mixture reaches a consistency that can be easily rolled into balls.
  • Freeze or refrigerate until firm and enjoy!

Notes

  • Energy bites can be stored in a sealed container in the refrigerator for up to 1 week, or in the freezer for up to 3 months.
