How to Make Easy Apple Pie Overnight Oats

These Apple Pie Overnight Oats are dairy free, gluten free, refined sugar free, but NOT free of flavor or comfort. They’re super creamy and thick, and the fresh apple provides a lovely crunch in every bite. The cinnamon and apple pie spice add some warm flavors, and the pure maple syrup adds just the right touch of sweetness!

Overnight oats are one of my favorite easy breakfasts. And if you’re a meal-prep kind of person, overnight oats are a great option. Just mix everything together and store in the fridge for up to 5 days! They actually taste better over time as the flavors sit and mend together.

You can eat them as early as 2 hours after making them, or let them sit overnight for the optimum thick, creamy texture! You can also eat them cold straight from the fridge (that’s what I do), or re-heat them in the microwave. Enjoy!

Ingredients
  

  • 2 cups old-fashioned oats, use certified gluten-free if needed
  • 1 ¼ cup red apple, chopped
  • 3 ¾ cup coconut milk, unsweetened
  • 2 ½ tsp cinnamon
  • 1 ¼ tsp apple pie spice
  • ½ tsp sea salt
  • 5 tbsp. pure maple syrup
  • 5 tbsp. flaxseed, ground

Instructions
 

  • Simply mix all ingredients in a large bowl until well combined. Transfer to a sealed container and store in the fridge for up to 5 days.
